How Did I Miss National Pecan Day?
So, this post is better late than never. Yesterday, April 14, was National Pecan Day (not to be confused with just regular Pecan Day on March 25) but just because both pecan days have passed, it doesn’t mean we can still celebrate.
I found this amazing Turtle Candy recipe on Examiner.com (Shannon Wendt) and thought it was worthy of re-posting here.
This kind of candy is great to make in large batches and freeze, or give away as gifts, so we recommend buying the ingredients in bulk.
- Preheat oven to 300°.
- Cover cookie sheet with aluminum foil, shiny side up and place pecans in a Y shape on the cookie sheet. Place one caramel in the center of each Y and bake just til melted, about 5 to 8 minutes.
- Meanwhile, microwave chocolate chips with butter for about 40 seconds. Stir and place back in the microwave and heat for another 40 seconds or til the chocolate is smooth. Carefully spread the chocolate over the candies, leaving the ends of the pecans uncovered.
- Let candies rest for an hour before storing tightly covered at room temperature.
